Pasta Preparation

    Cook the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water, then drain the spaghetti.

Sauce Preparation

    Prepare the Sauce

    In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined. Set aside.

Pancetta Cooking

    Cook the Pancetta

    In a large skillet over medium heat, add the pancetta. Cook until crispy, about 5-7 minutes. Remove from heat and allow to cool slightly.

Combining Ingredients

    Combine Spaghetti and Pancetta

    Add the drained spaghetti to the skillet with the pancetta. Toss to combine and allow the residual heat to warm the pasta.

    Finish the Sauce

    Remove the skillet from heat. Quickly pour the egg mixture over the hot spaghetti, tossing continuously to create a creamy sauce. If the mixture is too thick, add reserved pasta water, a little at a time, until desired consistency is reached.

Serving

    Serve the Carbonara

    Plate the spaghetti carbonara and garnish with chopped fresh parsley. Serve immediately with extra Parmesan cheese and black pepper on the side.
