1. Prepare the Peppers

Wash the bell peppers thoroughly under running water. Cut off the tops and remove the seeds and membranes. Slice the peppers into strips or rings as desired.

In a medium saucepan, combine the white vinegar, water, sugar, salt, black peppercorns, dried oregano, and crushed red pepper flakes. Stir well to dissolve the sugar and salt.

Seal the jars with lids while the brine is still hot. Allow the jars to cool to room temperature before storing them in the refrigerator.
