Method

Preparation

  1. 1

    Prepare the Peppers

Wash the bell peppers thoroughly under running water. Cut off the tops and remove the seeds and membranes. Slice the peppers into strips or rings as desired.

  2. 2

    Prepare the Garlic

Peel the garlic cloves and crush them slightly with the side of a knife to release their flavor.

Brine Mixture

  1. 3

    Combine Brine Ingredients

In a medium saucepan, combine the white vinegar, water, sugar, salt, black peppercorns, dried oregano, and crushed red pepper flakes. Stir well to dissolve the sugar and salt.

  2. 4

    Heat the Brine

Place the saucepan over medium heat and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 5 minutes.

Pickling Process

  1. 5

    Pack the Peppers

In sterilized jars, pack the sliced bell peppers and crushed garlic cloves tightly, leaving some space at the top of the jar.

  2. 6

    Pour the Brine

Once the brine is ready, carefully pour it over the packed peppers in the jars, ensuring that the peppers are fully submerged.

  3. 7

    Seal and Cool

Seal the jars with lids while the brine is still hot. Allow the jars to cool to room temperature before storing them in the refrigerator.

Serving

  1. 8

    Serve

Let the vinegar peppers marinate for at least 24 hours before serving for the best flavor. Garnish with fresh parsley if desired.
