Method

Prepare the Pork & Vegetables

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Season the Pork

    Rub the pork loin with olive oil, salt, and black pepper. Place the pork in a roasting pan.

    Prepare the Vegetables

    Peel and quarter the cipollini onions. Wash and trim the broccoli rabe. Toss the cherry tomatoes with a little olive oil, salt, and pepper.

    Add Vegetables to the Pan

    Arrange the cipollini onions, broccoli rabe, and seasoned cherry tomatoes around the pork in the roasting pan.

Roast the Pork

    Roast

    Roast the pork and vegetables in the preheated oven for about 25-30 minutes or until the pork reaches an internal temperature of 145°F (63°C).

Prepare the Sweet Tomato Garlic Butter

    Melt the Butter

    In a small saucepan, melt the stick of unsalted butter over medium heat.

    Add Garlic

    Add minced garlic cloves to the melted butter and sauté for about 1-2 minutes until fragrant.

    Add Tomatoes and Basil

    Stir in the cup of cherry tomatoes and fresh basil leaves, cooking for an additional 5 minutes until the tomatoes are soft and the flavors meld.

Cook the Fettuccini

    Boil Water

    Bring a large pot of salted water to a boil.

    Cook Pasta

    Add the fettuccini pasta and cook according to package instructions until al dente. Drain and set aside.

Serve

    Slice and Serve

    Once the pork is done, let it rest for a few minutes before slicing. Serve the pork on a plate with roasted vegetables, fettuccini, and drizzle the sweet tomato garlic butter over the top.
