Cake Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, baking powder, and salt.

    Cream Butter and Sugar

    In another bowl, cream the softened butter and granulated sugar together until light and fluffy.

    Add Eggs and Vanilla

    Add the eggs, one at a time, mixing well after each addition, followed by the vanilla extract.

    Combine Mixtures

    Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.

    Bake the Cake

    Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

    Cool the Cakes

    Once baked, let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Limoncello Syrup Preparation

    Combine Ingredients

    In a small saucepan, combine the limoncello, granulated sugar, and water.

    Heat the Mixture

    Heat over medium heat until the sugar has dissolved. Remove from heat and let cool.

Lemon Mousse Preparation

    Prepare Gelatin

    In a small bowl, sprinkle the gelatin powder over cold water and let it sit for about 5 minutes to bloom.

    Heat Gelatin

    Gently heat the bloomed gelatin until dissolved, then set aside to cool slightly.

    Whip Cream

    In a large bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and continue whipping until stiff peaks form.

    Combine Mousse Ingredients

    In another bowl, combine the lemon juice and lemon zest with the dissolved gelatin. Fold this mixture into the whipped cream until well combined.

    Chill the Mousse

    Refrigerate the lemon mousse for at least 30 minutes until set.

Assembly

    Layer the Cake

    Once the cakes are completely cool, place one layer on a serving platter. Brush generously with the limoncello syrup.

    Spread a layer of lemon mousse over the soaked cake layer.

    Top with Second Layer

    Place the second cake layer on top and repeat the process of brushing with limoncello syrup and adding lemon mousse.
