Method

Crust Preparation

  1. 1

    Prepare the Crust

In a medium mixing bowl, combine the graham cracker crumbs and sugar. Pour in the melted butter and stir until the mixture is well combined and resembles wet sand.

  2. 2

    Press the Crust

Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Use the back of a measuring cup to pack it tightly.

  3. 3

    Bake the Crust

Preheat your oven to 350°F (175°C) and bake the crust for 8-10 minutes until lightly golden. Remove from the oven and let cool while preparing the filling.

Filling Preparation

  1. 4

    Make the Cream Cheese Mixture

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the sugar and continue beating until well combined.

  2. 5

    Add Eggs and Vanilla

Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract until fully incorporated.

  3. 6

    Prepare Pumpkin Mixture

In a separate bowl, combine the canned pumpkin puree, ground cinnamon, ground nutmeg, and salt. Mix well until smooth.

  4. 7

    Combine Mixtures

Scoop half of the cream cheese mixture into the pumpkin mixture and gently fold to combine. You should have a creamy orange filling.

  5. 8

    Layer the Filling

Pour half of the plain cream cheese mixture into the cooled crust, then add half of the pumpkin mixture over it. Repeat the layers with the remaining mixtures.

  6. 9

    Swirl the Mixtures

Using a knife or skewer, gently swirl through the layers to create a marbled effect. Be careful not to mix them completely.

  7. 10

    Bake the Swirl

Bake in the preheated oven for 50-60 minutes, until the center is set and doesn't jiggle. Turn off the oven and leave the cheesecake inside for an additional hour.

  8. 11

    Cool and Chill

Remove from the oven and let cool to room temperature. Then refrigerate for at least 4 hours or overnight before serving.
