Brownie Base Preparation

  1. 1

    Melt Butter

Preheat your oven to 350°F (175°C). In a medium saucepan, melt 1 cup of unsalted butter over low heat.

  2. 2

    Combine Sugars

Once melted, remove from heat and stir in 1.5 cups granulated sugar and 0.5 cups brown sugar until well combined.

  3. 3

    Add Eggs and Vanilla

Add 3 large eggs and 1 tsp vanilla extract to the mixture, whisking until smooth.

  4. 4

    Mix Dry Ingredients

In a separate bowl, whisk together 1 cup all-purpose flour, 0.5 cups cocoa powder, 0.5 tsp salt, and 0.5 tsp baking powder.

  5. 5

    Combine Wet and Dry

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  6. 6

    Pour into Pan

Pour the brownie batter into a greased 9x13 inch baking pan and spread evenly.

Caramel Layer Preparation

  1. 7

    Make Caramel

In a medium saucepan, heat 1 cup granulated sugar over medium heat, stirring constantly until it melts into a liquid and turns a golden amber color.

  2. 8

    Add Cream and Butter

Once melted, carefully add 0.5 cup heavy cream and 0.25 cup unsalted butter. Be cautious, as it will bubble up.

  3. 9

    Finish the Caramel

Stir in 1 tsp vanilla extract and 0.25 tsp sea salt. Remove from heat and let cool slightly.

  4. 10

    Layer Caramel

Pour the caramel over the brownie base in the baking pan, spreading evenly.

Chocolate Topping Preparation

  1. 11

    Melt Chocolate

In a small saucepan or microwave, combine 1 cup semi-sweet chocolate chips and 2 tbsp unsalted butter. Heat gently until melted, stirring until smooth.

  2. 12

    Spread Chocolate

Pour the melted chocolate over the caramel layer, spreading evenly with a spatula.

  3. 13

    Cool and Set

Let the brownie cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours to set completely.

  4. 14

    Cut and Serve

Once set, cut into squares and serve. Enjoy your chocolate caramel cookie brownie!
