Base Preparation

    Heat the Milk and Cream

    In a medium saucepan, combine the whole milk and heavy cream over medium heat. Stir occasionally until the mixture is hot but not boiling.

    Whisk the Sugar and Egg Yolks

    In a bowl, whisk together the granulated sugar and egg yolks until the mixture is pale and slightly thickened.

    Temper the Egg Mixture

    Slowly add about a cup of the hot milk and cream mixture to the egg yolks, whisking constantly. This will temper the yolks and prevent them from scrambling.

    Combine and Cook

    Pour the tempered egg mixture back into the saucepan with the remaining milk and cream. Cook over medium heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon.

    Strain and Flavor

    Strain the mixture through a fine-mesh sieve into a clean bowl to remove any cooked egg bits. Stir in the vanilla extract.

Flavoring and Chilling

    Prepare Strawberry Gelato

    If making strawberry gelato, blend the fresh strawberries until smooth and mix it into the base after straining.

    For chocolate gelato, whisk the cocoa powder into the base after straining until fully combined.

    Chill the Mixture

    Cover the bowl with plastic wrap and chill the mixture in the refrigerator for at least 4 hours or overnight.

Churning and Freezing

    Churn the Gelato

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a thick, soft-serve consistency.

    Freeze the Gelato

    Transfer the gelato to an airtight container and freeze for at least 4 hours to firm up before serving.
