Calamari Preparation

Clean the Calamari
Rinse the fresh calamari under cold water. Remove the head and innards, and then cut the bodies into rings. Set aside.

Soak in Buttermilk
Place the calamari rings in a bowl and pour the buttermilk over them. Let them soak for at least 30 minutes in the refrigerator.

Prepare the Breading
In a separate bowl, mix the flour, cornstarch, salt, black pepper, paprika, and garlic powder until well combined.

Heat the Oil
In a large pot or deep fryer, heat the oil to 375°F (190°C).

Bread the Calamari
Remove the calamari from the buttermilk and let the excess drip off. Dredge each piece in the flour mixture, ensuring they are evenly coated.

Fry the Calamari
Carefully place the breaded calamari in the hot oil in batches, avoiding overcrowding. Fry for 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasonings
Pour in the crushed tomatoes, and add the dried oregano, salt, black pepper, sugar, and fresh basil. Stir to combine.

Simmer the Sauce
Bring the sauce to a gentle simmer. Reduce heat to low and let it cook for about 15-20 minutes, stirring occasionally.
