Chicken Cutlet

Method

Preparing the Chicken

    Prepare the Chicken

    Preheat your oven to 375°F (190°C). Place chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thickness.

    Set up Breading Station

    In three separate shallow dishes, place flour, beaten eggs, and breadcrumbs mixed with salt and pepper.

    Bread the Chicken

    Dip each chicken breast first in flour, shaking off excess, then in the egg, and finally coat with breadcrumbs.

    Fry the Chicken

    In a large skillet, heat olive oil over medium heat. Add the breaded chicken cutlets and cook for about 4-5 minutes on each side until golden brown. Remove and drain on paper towels.

Making the Marinara Sauce

    Sauté Garlic

    In the same skillet, add 2 tablespoons of olive oil and minced garlic. Sauté for about 1 minute until fragrant.

    Add Tomatoes and Seasonings

    Add the crushed tomatoes, oregano, basil, salt, pepper, and sugar. Stir well and let simmer for 15-20 minutes until thickened.

Assembling and Baking

    Assemble the Dish

    In a baking dish, spread a thin layer of marinara sauce, place the fried chicken cutlets on top, and then generously cover with remaining marinara sauce.

    Add Cheese

    Sprinkle mozzarella and parmesan cheese over the top of the chicken and sauce.

    Bake

    Place the baking dish in the preheated oven and bake for 20-25 minutes or until the cheese is melted and bubbly.

Serving

    Serve

    Let the chicken parmigiana cool for a few minutes before serving. Garnish with fresh basil if desired.
