Chicken Meatballs

    Prepare the Meatball Mixture

    In a large bowl, combine ground chicken, chopped artichoke hearts, grated Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and black pepper. Mix until well combined.

    Form the Meatballs

    Preheat the oven to 400°F (200°C). Form the chicken mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.

    Bake the Meatballs

    Bake in the preheated oven for 20-25 minutes or until cooked through and golden brown.

Alfredo Sauce

    Make the Sauce

    In a saucepan over medium heat, melt butter. Add minced garlic and sauté for 1-2 minutes until fragrant. Pour in heavy cream and bring to a gentle simmer.

    Add Cheese

    Stir in grated Parmesan cheese, salt, and black pepper. Continue to stir until the cheese is melted and the sauce is creamy. Remove from heat.

Fettuccine

    Prepare the Dough

    On a clean surface, mound the all-purpose flour and make a well in the center. Add in eggs and salt. Gradually mix the flour into the eggs until a dough forms.

    Knead and Roll Out

    Knead the dough for about 5 minutes until smooth. Roll it out thinly using a pasta machine or rolling pin, and then cut into fettuccine strips.

    Cook the Fettuccine

    Bring a large pot of salted water to a boil. Add the fettuccine and cook for 2-3 minutes until al dente. Drain and set aside.

Blistered Tomatoes

    In a skillet over medium-high heat, heat olive oil. Add cherry tomatoes and cook for 5-7 minutes, shaking the pan occasionally, until they are blistered and softened. Season with salt and black pepper.

Combine and Serve

    In a large serving bowl, mix the cooked fettuccine with the Alfredo sauce. Add the baked chicken meatballs and blistered tomatoes, tossing gently to combine.

    Serve immediately, garnished with additional grated Parmesan cheese if desired.
