Crust Preparation

    Prepare the oven

    Preheat your oven to 350°F (175°C).

    Combine crust ingredients

    In a medium mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until all crumbs are well coated.

    Form the crust

    Press the mixture evenly into the bottom of a 9-inch springform pan to create a firm crust.

    Bake the crust

    Bake the crust in the preheated oven for 8-10 minutes, or until set and lightly golden. Remove from the oven and let cool.

Cheesecake Filling

    Beat the cream cheese

    In a large mixing bowl, beat the softened cream cheese until smooth and creamy using an electric mixer.

    Add sugar and sour cream

    Gradually add the granulated sugar and sour cream, mixing until well combined and smooth.

    Incorporate flavorings

    Add vanilla extract and lemon juice, mixing until incorporated.

    Add eggs

    Add the eggs one at a time, mixing on low speed just until blended after each addition. Avoid overmixing.

    Pour filling into crust

    Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.

    Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.

Topping

    Wash and slice the fresh strawberries. Rinse the blueberries and raspberries.
