Cannoli Shells

Prepare the Dough
In a large mixing bowl, combine all-purpose flour, granulated sugar, and salt. Mix well to combine.

Add Butter and Egg
Cut in the unsalted butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs. Add the egg yolk and white wine or vinegar, mixing until the dough comes together.

Knead and Rest
Turn the dough out onto a lightly floured surface and knead for about 5 minutes until smooth. Wrap in plastic wrap and let rest for at least 30 minutes.

Roll Out the Dough
After resting, roll out the dough to about 1/8 inch thickness. Cut into 4-inch circles or ovals.

Fry the Shells
Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Wrap each dough circle around a cannoli tube and secure with a little water. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Prepare the Filling
In a medium bowl, combine ricotta cheese, confectioners' sugar, and vanilla extract. Mix until smooth and creamy.

Add Chocolate Chips
Fold in the chocolate chips and pistachios or candied orange peel if using, until evenly distributed.

Fill the Shells
Once the cannoli shells are completely cooled, use a piping bag or a small spoon to fill each shell with the ricotta mixture. Fill them just before serving to keep the shells crisp.
