Cake Preparation

    Preheat the Oven

    Preheat your oven to 175°C (350°F) and grease a round 9-inch cake pan.

    Mix Wet Ingredients

    In a large mixing bowl, combine the almond paste, ricotta cheese, eggs, sugar, and vanilla extract. Beat until smooth and well incorporated.

    Combine Dry Ingredients

    In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

    Combine Mixtures

    Gradually add the dry ingredient mixture to the wet mixture, folding gently until just combined. Be careful not to overmix.

    Bake the Cake

    Pour the batter into the prepared cake pan and spread evenly. Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.

    Once baked, remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

Caramelized Almonds Preparation

    In a small saucepan over medium heat, combine the granulated sugar, water, and butter. Stir until the sugar has dissolved.

    Caramelize the Almonds

    Add the slivered almonds to the saucepan and stir to coat them in the caramel mixture. Continue to cook, stirring frequently, until the almonds are golden brown and the caramel is thick (about 5-7 minutes).

    Remove from heat and spread the caramelized almonds onto a parchment-lined baking sheet to cool completely.
