Marinade

Prepare the Marinade
In a large bowl, combine pineapple juice, chipotle peppers, minced garlic, cumin, oregano, salt, and black pepper. Mix well to create a marinade.

Marinate the Pork
Cut the pork shoulder into small chunks and add it to the marinade. Mix well, ensuring all pieces are coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Cook the Pork
In a large skillet, heat vegetable oil over medium-high heat. Remove the pork from the marinade (reserve the marinade) and add it to the skillet. Sear the pork on all sides until browned, about 8-10 minutes.

Add Marinade
Pour the reserved marinade over the seared pork and reduce the heat to medium. Cover and simmer for 1.5 to 2 hours, stirring occasionally, until the pork is tender and can be easily shredded.

Prepare the Tacos
Warm the corn tortillas in a dry skillet over medium heat until soft. Spoon the shredded pork onto each tortilla.

Top the pork with diced pineapple, chopped onion, and cilantro. Serve with lime wedges on the side.
