    In a mixing bowl, combine the olive oil, lemon juice, minced garlic, chopped rosemary, salt, and black pepper. Whisk together until well combined.

Capon Preparation

    Marinate the Capon

    Place the capon in a large resealable plastic bag or a deep dish. Pour the marinade over the capon, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

    Prepare the Vegetables

    While the capon is marinating, prepare the vegetables. Chop the carrots and celery, and quarter the onion.

    Preheat your oven to 350°F (175°C).

    In a large roasting pan, spread the chopped carrots, celery, and onion evenly. Place the marinated capon on top of the vegetables.
