Prepare the Ingredients
Rinse the Arborio rice under cold water until the water runs clear. Chop the onion, garlic, and red bell pepper finely. Clean the wild mushrooms and slice them if large.

Sauté Vegetables
In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the chopped onion, garlic, and red bell pepper. Sauté for about 5 minutes or until softened.

Add Wild Mushrooms
Stir in the sliced wild mushrooms and cook for another 5 minutes, until they start to soften.

Cook the Rice
Add the Arborio rice to the skillet, stirring to coat the grains in the oil and vegetables. Toast the rice for about 2-3 minutes.

Add Broth and Saffron
Pour in the vegetable broth and add the saffron threads. Season with salt and black pepper to taste. Bring to a simmer.

Slow Cook the Rice
Reduce the heat to low, cover the skillet, and let the rice cook for about 20 minutes, stirring occasionally, until the rice is creamy and al dente.

Garnish
Once cooked, remove from heat and let it rest for a few minutes. Garnish with chopped parsley before serving.
