Preparation Directions
Fry Tortillas
Heat vegetable oil in a large skillet over medium heat. Cut the corn tortillas into quarters and fry them until they are crispy. Remove and let them drain on paper towels.
Prepare the Sauce
In the same skillet, add the tomato sauce, chili powder, and salt. Stir well and let it simmer for 5 minutes.
Combine Tortillas and Sauce
Add the fried tortilla pieces to the skillet with the sauce. Gently toss to coat the tortillas in the sauce and cook for another 2-3 minutes.
Serve
Transfer the chilaquiles to a serving dish. Top with fried eggs, cheese, sour cream, and sliced onions. Serve with cooked rice, beans, and a side salad of shredded lettuce and chopped tomato.
