    Cook the Beef

    In a large skillet, heat 1 tablespoon of cooking oil over medium heat. Add the beef and cook until browned, about 5-7 minutes. Season with salt and black pepper. Remove from skillet and shred the beef.

    Sauté Vegetables

    In the same skillet, add the remaining tablespoon of oil. Add the chopped onion and jalapeno pepper, and sauté until the onion is translucent, about 3-4 minutes. Then add the chopped tomatoes and cook for another 2-3 minutes.

    Combine Ingredients

    Return the shredded beef to the skillet with the sautéed vegetables. Mix well and let it cook together for about 3-4 minutes, allowing the flavors to meld.

    Scramble the Eggs

    In a bowl, beat the eggs with a pinch of salt and pepper. Pour the beaten eggs into the skillet and scramble them with the beef and vegetable mixture until the eggs are fully cooked, about 3-4 minutes.

    Remove from heat and garnish with chopped fresh cilantro. Serve warm with tortillas or rice.
