Tacos al Pastor Ingredients

Method

Tacos al Pastor Directions

  1. 1

    Marinate the Pork

In a blender, combine guajillo chiles, ancho chiles, garlic, cumin, oregano, vinegar, pineapple juice, salt, and black pepper. Blend until smooth. Pour the marinade over the pork shoulder in a large bowl or resealable bag. Ensure the pork is well coated. Marinate for at least 4 hours, preferably overnight.

  2. 2

    Cook the Pork

Preheat your grill or skillet over medium-high heat. Remove the pork from the marinade and let excess marinade drip off. Grill the pork for about 20-25 minutes, turning occasionally, until cooked through and slightly charred. Let it rest for 10 minutes before slicing.

  3. 3

    Prepare the Tacos

While the pork is resting, warm the corn tortillas on the grill or skillet for about 30 seconds on each side. Slice the cooked pork thinly. Assemble the tacos by placing sliced pork on a tortilla, topped with diced pineapple, chopped onion, and fresh cilantro.

  4. 4

    Serve

Serve the tacos with lime wedges on the side for squeezing over the top.
