For the Al Pastor Filling

For the Burrito Assembly

Method

Preparing the Al Pastor Filling

  1. 1

    Marinate the Pork

In a large bowl, combine the pork shoulder, adobo sauce, garlic, onion, lime juice, salt, and pepper. Let it marinate for at least 2 hours or overnight in the refrigerator.

  2. 2

    Cook the Pork

In a large skillet over medium heat, cook the marinated pork until browned and cooked through, about 20-25 minutes. Remove from heat and let it cool slightly before shredding.

  3. 3

    Add Pineapple and Cilantro

Mix in the diced pineapple and chopped cilantro into the shredded pork, stirring well to combine.

Assembling the Burrito

  1. 4

    Warm the Tortillas

Heat the flour tortillas in a dry skillet or microwave until warm and pliable.

  2. 5

    Fill the Burrito

Place a generous portion of the al pastor filling on each tortilla, followed by cheese, sour cream, guacamole, and salsa.

  3. 6

    Roll the Burrito

Fold in the sides of the tortilla and roll tightly from the bottom up to enclose the filling.

  4. 7

    Serve

Slice the burritos in half and serve with additional salsa or lime wedges on the side.
