    Soak the Rice

    In a bowl, combine the long-grain white rice and 2 cups of water. Allow it to soak for at least 4 hours or overnight.

    Blend the Mixture

    After soaking, drain the rice and place it in a blender with the remaining 2 cups of water and the cinnamon sticks. Blend until the rice is finely ground.

    Strain the Mixture

    Using a fine mesh strainer or cheesecloth, strain the blended mixture into a pitcher to separate the liquid from the rice solids.

    Add Flavorings

    Stir in the sugar, vanilla extract, and milk (if using) into the strained liquid. Mix until the sugar is fully dissolved.

    Chill and Serve

    Refrigerate the horchata for at least 1 hour. Serve over ice if desired and garnish with a sprinkle of ground cinnamon.
