    Prepare the Vegetables

    Chop the tomato, onion, and bell pepper into small pieces. Rinse the spinach and roughly chop it if the leaves are large.

    Cook the Vegetables

    In a non-stick skillet, heat the olive oil over medium heat. Add the onion and bell pepper, sautéing until soft, about 3-4 minutes. Then, add the chopped tomato and spinach, cooking until the spinach wilts, about 2 minutes.

    Whip the Egg Whites

    In a bowl, whisk the egg whites until frothy. Season with a pinch of salt and pepper to taste.

    Combine and Cook

    Pour the egg whites over the sautéed vegetables in the skillet. Cook on medium-low heat until the edges start to set, then gently lift the edges with a spatula, allowing the uncooked egg to flow underneath.

    Finish Cooking

    Once the omelette is mostly set but still slightly runny on top, you can fold it in half and let it cook for another minute until fully set.

    Slide the omelette onto a plate and serve with home fries and a slice of toasted bread.
