Mole Sauce Preparation

Prepare the Chiles
Remove the stems and seeds from the dried chiles. In a dry skillet over medium heat, toast the chiles for about 2-3 minutes until fragrant. Be careful not to burn them.

Blend the Sauce
In a blender, combine the toasted chiles, chicken broth, tomato, garlic, onion, peanut butter, cinnamon stick, cumin, oregano, sugar, salt, and black pepper. Blend until smooth.

Cook the Mole Sauce
In a large saucepan over medium heat, pour the blended mole sauce and simmer for about 20-30 minutes, stirring occasionally until thickened.

Combine with Chicken
Add the cooked chicken to the mole sauce and stir to coat. Allow it to simmer for an additional 10 minutes to absorb the flavors.

Serve the mole chicken hot, garnished with sesame seeds or fresh cilantro if desired.
