Prepare the Dough
In a large mixing bowl, combine the masa harina and salt. Gradually add water, mixing until a soft dough forms. Adjust with more water or masa harina as needed.

Shape and Cook the Gorditas
Divide the dough into equal portions (about the size of a golf ball). Flatten each portion into a thick tortilla, about 1/2 inch thick. Heat a skillet or griddle over medium heat and cook each gordita for about 3-4 minutes on each side until they are lightly browned and cooked through.

Stuff the Gorditas
Once cooked, carefully slice open each gordita to create a pocket. Stuff with your choice of cooked meat, then top with lettuce, Mexican cream, crumbled cheese, and sliced onions.

Serve the gorditas warm with spicy green or red sauce on the side for dipping.
