    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add the shredded chicken, season with salt and pepper, and sauté until heated through.

    Warm the Tortillas

    In a separate skillet, lightly warm the corn tortillas on both sides until pliable. Keep them covered with a clean kitchen towel to stay warm.

    Assemble the Enchiladas

    Take a warm tortilla, add a portion of the chicken filling, roll it up tightly, and place it seam-side down in a baking dish. Repeat with remaining tortillas.

    Add Sauce

    Pour the green, red or mole sauce evenly over the enchiladas, covering them completely.

    Bake

    Preheat the oven to 350°F (175°C) and bake the enchiladas for about 15-20 minutes until heated through.

    Remove from the oven, and top with shredded lettuce, crumbled white cheese, diced onions, and sliced avocado before serving.
