Preheat your oven to 300°F (150°C). In a large mixing bowl, combine the pork shoulder with olive oil, minced garlic, chopped onion, cumin, oregano, chili powder, salt, black pepper, and lime juice. Mix until the pork is thoroughly coated.

Transfer the seasoned pork shoulder to a roasting pan. Add the bay leaves on top. Cover the pan tightly with aluminum foil and bake in the preheated oven for 3 hours, or until the pork is tender and easily shredded.
