    Prepare Home Fries

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook until golden and tender, about 10-12 minutes. Remove from the skillet and set aside.

    Cook Vegetables

    In the same skillet, add another tablespoon of olive oil. Add the diced onion, tomato, and chopped jalapeno. Sauté for about 5 minutes until the vegetables are softened.

    Make the Omelette

    In a bowl, whisk the eggs and season with salt and pepper. Pour the eggs into the skillet with the sautéed vegetables. Cook over medium-low heat until the edges start to set, about 3-4 minutes.

    Sprinkle the shredded cheddar cheese on one half of the omelette. Fold the other half over the cheese and cook for an additional 1-2 minutes until the cheese is melted.
