Prepare Home Fries
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook until golden and tender, about 10-12 minutes. Remove from the skillet and set aside.

Cook Vegetables
In the same skillet, add another tablespoon of olive oil. Add the diced onion, tomato, and chopped jalapeno. Sauté for about 5 minutes until the vegetables are softened.

Add Cheese
Sprinkle the shredded cheddar cheese on one half of the omelette. Fold the other half over the cheese and cook for an additional 1-2 minutes until the cheese is melted.

Toast the Bread
While the omelette finishes cooking, toast a slice of bread to your preference.

Serve
Transfer the omelette to a plate, serve with the home fries and a side of Mexican salsa, along with the toasted bread.
