Cook the Udon Noodles
Bring a large pot of water to a boil. Add the udon noodles and cook according to package instructions, usually about 5-7 minutes. Drain and set aside.

Sauté the Protein (if using)
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the sliced chicken, beef, or shrimp and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

Stir-fry the Vegetables
In the same skillet, add a little more sesame oil if needed. Add the bell pepper, carrot, broccoli, snow peas, and green onions. Stir-fry the vegetables for about 5 minutes, or until they are tender but still crisp.

Combine Noodles and Sauce
Add the drained udon noodles back to the skillet. Pour in the soy sauce, oyster sauce, and red pepper flakes. Toss everything together until the noodles are well coated in the sauce and heated through.

Add Protein Back
If you cooked protein earlier, return it to the skillet. Toss everything together to combine and heat through for another 2 minutes.
Serving

Garnish and Serve
Transfer the yaki udon to serving plates. Garnish with sesame seeds and chopped cilantro before serving.
