1. Cook the Quinoa

Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until all the water has been absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

2. Prepare the Chicken

While the quinoa is cooking, preheat a large skillet over medium-high heat. Season 2 cups of chicken breast (cut into bite-sized pieces) with garlic powder, cumin, salt, and black pepper. Drizzle with 2 tablespoons of olive oil.

3. Cook the Chicken

Add the seasoned chicken to the preheated skillet. Cook for about 7-10 minutes, stirring occasionally, until the chicken is cooked through and no longer pink in the center. Use a meat thermometer to ensure it reaches an internal temperature of 165°F (75°C).

4. Add Black Beans

Once the chicken is cooked, add 1 cup of black beans (drained and rinsed) to the skillet. Stir to combine, and cook for an additional 2-3 minutes until the beans are heated through.

5. Combine with Quinoa

Once both the quinoa and chicken bean mixture are ready, combine them in a large bowl. Mix well to combine all ingredients evenly.
