Prepare the Wasabi Stems
Rinse the fresh wasabi stems thoroughly under cold water to remove any dirt. Trim the ends and slice the stems into thin julienne strips, approximately 1-2 mm thick.

Prepare the Wasabi Leaves
Rinse the fresh wasabi leaves under cold water to clean them. Pat them dry with a paper towel, then chop them roughly into smaller pieces.
Marinade Preparation

Mix the Marinade
In a mixing bowl, combine rice vinegar, soy sauce, sugar, salt, and sesame oil. Whisk the mixture until the sugar and salt are fully dissolved.

Combine Stems and Leaves
Add the julienned wasabi stems and chopped leaves to the marinade. Ensure that all pieces are well coated.

Cover the bowl with plastic wrap and let the mixture marinate in the refrigerator for at least 1 hour, or up to 24 hours for a stronger flavor.
