Preparation of Sushi Rice

1. Cook Sushi Rice

Rinse 2 cups of sushi rice under cold water until the water runs clear. Cook according to package instructions, usually by using a rice cooker or boiling in water for about 20 minutes. Once cooked, let it cool slightly.

2. Season Sushi Rice

In a small bowl, mix 1/4 cup rice vinegar, 2 tablespoons sugar, and 1 teaspoon salt until dissolved. Gently fold the mixture into the cooked sushi rice and let it cool to room temperature.

3. Prepare Ingredients

Slice the cucumber and avocado into thin strips. If using crab sticks, shred them into thin pieces. Prepare your spicy mayo by mixing mayonnaise with sriracha to taste.

4. Assemble the Roll

Place a bamboo sushi mat on a clean surface and lay a nori sheet shiny side down. Wet your hands to prevent sticking, then grab a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch edge at the top.

5. Add Fillings

Place your chosen fillings (cucumber, avocado, crab sticks, cream cheese) horizontally across the center of the rice-covered nori.

6. Roll It Up

Using the bamboo mat, gently roll the nori away from you, tucking in the fillings as you go. Roll tightly but not too tight to avoid squeezing out the fillings. Wet the top edge of the nori to seal the roll.

7. Slice the Roll

Using a sharp knife dipped in water, slice the roll into 6-8 pieces. Wipe the knife after each cut to ensure clean slices.

8. Garnish and Serve

Sprinkle sesame seeds on top of the roll pieces. Serve with soy sauce, pickled ginger, and wasabi on the side for dipping.
