Preparing the Soft Shell Crab

Clean the Crabs
Rinse the soft shell crabs under cold water and pat them dry with paper towels.

Prepare Breading Mixture
In a bowl, mix the all-purpose flour, cornstarch, salt, and black pepper.

Coat the Crabs
Dredge each crab in the flour mixture, ensuring it is fully coated.

Heat the Oil
In a deep pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Crabs
Carefully place the coated crabs in the hot oil and fry for about 3-4 minutes on each side until golden brown. Remove and drain on paper towels.
Preparing the Takuan and Kaiware

Slice Takuan
Cut the takuan into thin strips for easier incorporation into the dish.

Rinse the kaiware under cold water and shake off excess water.
