Broth Base

Method

Preparing the Broth

  1. 1

    Combine Ingredients

In a large pot, combine the 8 cups of water and 4 cups of chicken or vegetable stock. This will serve as the base of your broth.

  2. 2

    Prepare Aromatics

Peel and crush the 4 cloves of garlic and chop the onion into quarters. Peel and chop the 2 carrots and chop the 2 celery stalks into large pieces.

  3. 3

    Add Aromatics to Pot

Add the prepared garlic, onion, carrots, and celery to the pot with the water and stock.

  4. 4

    Season the Broth

Add the 2 bay leaves, 1 teaspoon of thyme, 1 teaspoon of salt, and 1 teaspoon of black peppercorns to the pot.

  5. 5

    Simmer

Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer uncovered for 45 minutes. This allows all the flavors to meld together.

  6. 6

    Strain the Broth

After simmering, strain the broth through a fine-mesh sieve to remove all solid ingredients. Discard the solids and retain the liquid broth.

  7. 7

    Cool and Store

Let the broth cool to room temperature before storing it in airtight containers in the fridge for up to a week or freezing for longer storage.
