Method

Prepare the Tempura Batter

    Mix Dry Ingredients

    In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, and salt. Stir until well mixed.

    Add Ice Water

    Gradually add ice water to the dry mixture. Stir gently to combine until just mixed. Do not over-mix; some lumps are fine.

Prepare the Shrimp and Vegetables

    Prep Shrimp

    Ensure the shrimp are peeled and deveined. Pat them dry with a paper towel.

    Prep Vegetables

    Julienne the cucumber and shred the crab sticks into thin strips.

Make Eel Sauce

    Combine Ingredients

    In a small saucepan, combine soy sauce, mirin, sugar, cornstarch, and water.

    Heat the Sauce

    Heat the mixture over medium heat, stirring continuously until it thickens. Remove from heat and let cool.

Fry the Tempura

    Heat Oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

    Dip and Fry

    Dip shrimp and vegetables into the tempura batter, allowing excess to drip off. Carefully place them in the hot oil.

    Fry the items in batches for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
