    Prepare the Ingredients

    Make sure all the ingredients are ready. Rinse the shrimp and pat dry. If you haven't cooked the rice yet, cook it according to package instructions and let it cool.

    Dice the carrot, chop the green onions, and mince the garlic. Set aside.

    Heat Oil and Cook Shrimp

    In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the shrimp and season with salt and pepper. Cook for about 3-4 minutes until the shrimp turns pink and opaque. Remove shrimp from the pan and set aside.
