Preparation of Rice

Rinse the Sushi Rice
In a fine mesh strainer, rinse 1 cup of sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
Combine the rinsed rice with 1 1/4 cups of water in a rice cooker or pot. Bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes until all water is absorbed.

Season the Rice
Once cooked, remove from heat and let it sit covered for 10 minutes. In a small bowl, mix 2 tablespoons of rice vinegar, 1 teaspoon of sugar, and 1 teaspoon of salt. Gently fold this mixture into the rice.
Prepare the Protein

Cube the Ahi Tuna
Using a sharp knife, cut the 250 grams of Ahi tuna into small cubes, about 1/2 inch in size.

Marinate the Tuna
In a mixing bowl, combine the cubed tuna with 2 tablespoons of soy sauce and 1 tablespoon of sesame oil. Toss gently to coat and let it marinate for at least 10 minutes.

Cut the cucumber into thin slices, about 1/4 inch thick.

Thinly slice the radishes into rounds.

Finely chop the green onions, both the green and white parts.

Cut the avocado in half, remove the pit, and slice it into thin wedges.

Layer the Base
In a bowl, start with a generous scoop of seasoned sushi rice as the base.
