Tempura Shrimp Preparation

Prepare the Shrimp
In a mixing bowl, combine tempura batter mix with ice water until smooth. Dip each shrimp into the batter, allowing excess to drip off.

Fry the Shrimp
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the battered shrimp in batches until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.
Crabstick and Cucumber Preparation

Prepare the Crabstick
Cut the imitation crab sticks into bite-sized pieces, about 1-inch long.

Prepare the Cucumber
Thinly slice the cucumber into rounds or strips as desired.
Housemade Guacamole Preparation

Spicy Mayo Preparation

Mix Spicy Mayo
In a small bowl, mix mayonnaise and Sriracha sauce until well combined.
Eel Sauce Preparation

Prepare Eel Sauce
In a saucepan over medium heat, combine soy sauce, brown sugar, and mirin. Stir until the sugar dissolves. Bring to a simmer and cook for about 5 minutes until slightly thickened. Remove from heat.
Assembly

Assemble the Dish
On a serving platter, layer the tempura shrimp, crabstick, and cucumber. Add dollops of housemade guacamole and drizzle with spicy mayo and eel sauce. Sprinkle tempura flakes and sliced scallions on top.
