Preparation

    Prepare the Ingredients

    Start by slicing the eel fillet into thin strips (about 1 cm thick). Do the same for the tuna fillet. Slice the jalapenos into thin rings. Cut the takuan into strips.

    Prepare the Crab Stick

    If the crab stick is not already shredded, break it into smaller pieces to mimic the texture of crab meat.

    Make the Sauce Mixture

    In a small bowl, combine the Thai sauce and eel sauce. Mix well and set aside.

Cooking

    Fry the Eel

    In a deep frying pan or wok, heat the vegetable oil over medium-high heat. Once hot, carefully add the eel strips and fry for about 3-4 minutes or until golden brown and crispy. Remove and drain on paper towels.

    Sear the Tuna

    In the same pan, quickly sear the tuna fillet for about 30 seconds on each side. You want it to remain rare in the center. Remove and let it rest for a minute before slicing thinly.

Assembly

    Assemble the Dish

    On a large serving platter, layer the crispy eel, seared tuna slices, crab stick, takuan, and jalapenos. Garnish with kaiware and a dollop of fresh wasabi.

    Serve with Sauce

    Drizzle the prepared sauce mixture over the top and serve immediately while still warm. Enjoy your Dragon's Breath!
