Prepare Tempura Shrimp

    In a mixing bowl, combine the tempura batter mix with ice-cold water. Stir gently until just combined; avoid overmixing to keep the batter light and airy.

    In a deep pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Shrimp

    Dip each shrimp into the tempura batter, allowing excess batter to drip off. Carefully place the shrimp in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Julienne the cucumber and slice the avocado. Shred the crab sticks and slice the grilled eel into thin pieces.
