Main Course: Herb Grilled Chicken

Method

Main Course: Herb Grilled Chicken

  1. 1

    Marinate the Chicken

In a bowl, whisk together olive oil, minced garlic, chopped rosemary, chopped thyme, lemon juice, salt, and black pepper. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 450°F).

  3. 3

    Grill the Chicken

Remove the chicken from the marinade and discard the marinade. Place the chicken on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from grill and let rest for 5 minutes before serving.

Side Dish: Garlic Mashed Potatoes

  1. 4

    Boil the Potatoes

In a large pot, add the cubed russet potatoes and cover with water. Bring to a boil over high heat and cook for about 15-20 minutes, or until the potatoes are tender when pierced with a fork.

  2. 5

    Drain and Mash

Once the potatoes are cooked, drain them in a colander. Return the potatoes to the pot and add butter, heavy cream, minced garlic, salt, and black pepper. Mash the potatoes until smooth and creamy.

  3. 6

    Serve

Transfer the mashed potatoes to a serving dish and garnish with chopped chives before serving alongside the grilled chicken.
