Method

Preparation of Chicken

  1. 1

    Marinate Chicken

In a bowl, combine the olive oil, minced garlic (chop garlic finely), chopped rosemary, juice of the lemon, salt, black pepper, and paprika. Whisk together until well mixed. Add the chicken breasts to the marinade, ensuring they are fully coated. Cover and let marinate for at least 30 minutes in the refrigerator.

  2. 2

    Preheat the Oven

Preheat your oven to 200°C (400°F) while the chicken is marinating.

Cooking Chicken

  1. 3

    Bake Chicken

Remove the chicken from the marinade and place it on a baking tray lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 75°C (165°F).

Preparing Side Dish

  1. 4

    Prepare Asparagus and Tomatoes

While the chicken is baking, wash the asparagus and cherry tomatoes. Trim the ends of the asparagus and cut any larger tomatoes in half.

  2. 5

    Roast Vegetables

On a separate baking tray, combine asparagus and cherry tomatoes. Drizzle with balsamic vinegar, a pinch of salt, and pepper. Roast in the oven for the last 15 minutes of the chicken's cooking time.

Serving

  1. 6

    Plate the Dish

Once the chicken is cooked and vegetables are roasted, remove from the oven. Let the chicken rest for 5 minutes before slicing. Serve the chicken alongside the roasted asparagus and tomatoes.
