Preparation of Ingredients

    Chop Vegetables

    Wash and chop the carrots, celery, and onion into small pieces. Mince the garlic cloves.

    Prepare Optional Additions

    If using, slice the mushrooms and chop the parsley.

Cooking the Broth

    Combine Ingredients

    In a large pot, combine 8 cups of water, the chopped carrots, celery, onion, minced garlic, and salt.

    Add Herbs and Spices

    Add bay leaves, thyme, and peppercorns to the pot.

    Bring to a Boil

    Bring the mixture to a boil over medium-high heat.

    Simmer the Broth

    Once boiling, reduce the heat to low and let it simmer for about 45 minutes. If using, add the mushrooms and parsley halfway through.

    Strain the Broth

    After simmering, remove the pot from heat. Strain the broth using a fine mesh sieve or cheesecloth to remove the solids.

    The broth can be used immediately or stored in the refrigerator for up to a week, or frozen for longer storage.
