Prepare the Sushi Rice

    Rinse the Rice

    In a fine mesh sieve, rinse the sushi rice under cold water until the water runs clear to remove excess starch. This usually takes about 3-5 minutes.

    Cook the Rice

    Combine the rinsed sushi rice and water in a rice cooker or a pot. If using a pot, bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes. Remove from heat and let it sit for 10 minutes without lifting the lid.

    Season the Rice

    In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a wooden or glass bowl, and gently fold in the vinegar mixture while cooling the rice with a fan or spatula.

Prepare the Toppings

    Slice the Fish

    Using a sharp knife, slice the fresh salmon, tuna, and octopus into thin pieces, approximately 1/4 inch thick. Ensure the shrimp is peeled and cooked.

    If not pre-made, prepare the sweet omelette (tamago) by whisking eggs with sugar and soy sauce, then cook in a rectangular pan until set, flipping to create layers.

Assemble the Nigiri

    Wet your hands with water to prevent sticking. Take a small amount of seasoned sushi rice (about 2 tablespoons) and form it into an oval shape using your fingers.
