Preparation of Ribs

Season the Ribs
Preheat the oven to 300°F (150°C). Rub the baby back ribs with salt and black pepper. Place them on a baking sheet covered with aluminum foil.

Cook the Ribs
Cover the ribs with another piece of aluminum foil and bake for 2.5 to 3 hours until tender.

Prepare the Sauce
In a saucepan, combine mango puree, ketchup, brown sugar, apple cider vinegar, smoked paprika, garlic powder, onion powder, and mesquite seasoning. Cook over medium heat for 15 minutes, stirring occasionally.

Apply to Ribs
After the ribs are cooked, brush them generously with the mesquite mango barbecue sauce.

Whip the Potatoes
Add roasted garlic, butter, heavy cream, salt, and pepper to the potatoes. Whip until smooth and fluffy.
