Prepare the Filling

    Chop Vegetables

    Finely chop the carrot, cabbage, bell pepper, and green onions. You can use a food processor for quicker chopping.

    Sauté Aromatics

    In a pan over medium heat, add sesame oil and sauté minced garlic and ginger until fragrant, about 1-2 minutes.

    Combine Ingredients

    Add the chopped vegetables and bean sprouts to the pan. Stir in soy sauce, salt, and pepper. Cook for another 3-5 minutes until vegetables are slightly tender yet still crunchy.

Assemble the Spring Rolls

    Lay a spring roll wrapper on a clean surface. If the wrappers are stiff, you can dip them in warm water for a few seconds to soften.

    Fill Wrappers

    Place about 2 tablespoons of the vegetable filling in the center of the wrapper. Fold the sides over the filling and roll tightly from the bottom to the top, sealing the edges with a bit of water.
