Burger Preparation

Prepare Flaxseed Mixture

In a small bowl, mix ground flaxseed with water and let it sit for about 5 minutes until it thickens. This will act as a binding agent for the patties.

Mash Black Beans

In a large mixing bowl, add the cooked black beans. Using a fork or potato masher, mash the beans until mostly smooth, with some chunks remaining for texture.

Combine Ingredients

Add the cooked quinoa, chopped onion, minced garlic, flaxseed mixture, breadcrumbs, cumin, smoked paprika, salt, and black pepper to the mashed black beans. Mix everything together until well combined.

Form Patties

Divide the mixture into 4 equal portions and shape each portion into a patty, about 1 inch thick.

Cook Patties

Heat oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side until they are golden brown and heated through.

Assembly

Prepare Buns

Toast the whole grain burger buns if desired.

Assemble Burger

Spread 1 tablespoon of vegan mayo on the bottom half of each bun. Place a cooked patty on top, followed by slices of avocado, tomato, and a handful of leafy greens. Top with the other half of the bun.
