    Marinate the Chicken

    In a bowl, mix olive oil, minced garlic (chop finely), juice of half the lemon, chopped rosemary, salt, and black pepper. Add chicken thighs to the bowl, ensuring they are well-coated. Cover and let marinate in the fridge for at least 30 minutes.

    Prep the Sides

    While the chicken is marinating, wash and trim the green beans. Halve the baby potatoes for even cooking. Set aside.

    Cook the Chicken

    Preheat the oven to 200°C (400°F). Place marinated chicken thighs on a baking tray and bake for 25-30 minutes or until they are cooked through and golden brown.

    Cook the Potatoes

    In a pot, add halved baby potatoes and cover with water. Bring to a boil and cook for about 15-20 minutes until tender. Drain and set aside.

    Sauté the Green Beans

    In a skillet over medium heat, melt butter. Add green beans and sauté for 5-7 minutes until tender-crisp. Add chopped parsley for a fresh touch.

    Once the chicken is cooked, remove it from the oven. Serve the chicken thighs alongside the sautéed green beans and boiled baby potatoes. Squeeze the remaining lemon half over the dish for extra flavor.
