For the Seasonal Vegetables

For the Lemon Butter Sauce

Method

Grilling the Salmon

  1. 1

    Prepare the Marinade

In a small bowl, mix together olive oil, garlic powder, salt, black pepper, and fresh lemon juice. This will be your marinade for the salmon.

  2. 2

    Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.

  3. 3

    Preheat the Grill

Preheat your grill to medium-high heat. Make sure the grill grates are clean and lightly oiled to prevent sticking.

  4. 4

    Grill the Salmon

Remove the salmon from the marinade and place it skin-side down on the grill. Grill for about 6-8 minutes on each side, or until the salmon flakes easily with a fork.

Preparing the Seasonal Vegetables

  1. 5

    Prepare the Vegetables

Wash and trim the asparagus. Halve the cherry tomatoes and slice the zucchini into thin rounds.

  2. 6

    Season the Vegetables

In a large bowl, toss the asparagus, cherry tomatoes, and zucchini with olive oil, salt, and black pepper.

  3. 7

    Grill the Vegetables

Using a grill basket or skewers, grill the vegetables for about 5-7 minutes, or until tender and slightly charred.

Making the Lemon Butter Sauce

  1. 8

    Melt the Butter

In a small saucepan, melt the unsalted butter over medium heat.

  2. 9

    Add Garlic and Lemon Juice

Once the butter is melted, add minced garlic and sauté for about 1 minute until fragrant. Then, stir in the fresh lemon juice.

  3. 10

    Finish the Sauce

Remove from heat and stir in chopped parsley, salt, and black pepper to taste. Keep warm until ready to serve.
