Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer (or sparkling water) until the batter is smooth and has a thick consistency. Let it rest for about 15-20 minutes.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small amount of batter; it should sizzle and float.

Batter and Fry the Fish
Dip each cod fillet into the batter, allowing any excess to drip off. Carefully place the battered fish into the hot oil. Fry for about 4-5 minutes, or until the fish is golden brown and cooked through. Remove and drain on paper towels.

In a separate pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chips
Add the potato strips to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 4-5 minutes until they start to turn golden. Remove them from the oil and drain on paper towels. Sprinkle with salt to taste.

Mix the Ingredients
In a small bowl, combine the mayonnaise, chopped dill pickles, capers, lemon juice, and fresh dill. Mix well until all ingredients are incorporated. Season with salt and black pepper to taste.
