Method

Marinade Preparation

  1. 1

    Prepare the Marinade

In a large bowl, combine the soy sauce, coconut milk, brown sugar, minced garlic, grated ginger, lime juice, chili powder, salt, and black pepper. Mix well until the sugar is dissolved.

  2. 2

    Marinate the Chicken

Cut the chicken breast into bite-sized pieces and add them to the marinade. Ensure all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Peanut Sauce Preparation

  1. 3

    Mix the Peanut Sauce

In a small bowl, whisk together the peanut butter, soy sauce, lime juice, brown sugar, water, minced garlic, and red pepper flakes. Adjust the water quantity to achieve desired consistency. Set aside.

Skewering and Cooking

  1. 4

    Prepare the Skewers

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat the grill to medium-high heat.

  2. 5

    Skewer the Chicken

Thread the marinated chicken pieces onto the soaked skewers, leaving a little space between each piece for even cooking.

  3. 6

    Grill the Skewers

Place the skewers on the preheated grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

  4. 7

    Serve

Remove the skewers from the grill and serve hot with the peanut sauce on the side for dipping.
